I recently had the pleasure to photograph Erik Johansen, Executive Chef & Owner of the Iron Forge Inn in Warwick, New York.  Erik’s passion for local, fresh products is brought to life daily on the Iron Forge’s brunch, appetizer and dinner menus. Erik prepared the Forge’s Short ribs.  The tender meat sits atop an onion bread pudding, made with roasted onions and formed with a sugarless custard.

 

 

 

 

 

Getting to capture a chef prepare a meal as opposed to just shooting the final product is really a joy.  You see what goes into it, and you get the whole story.

 

 

 

 

 

Erik prepared the Forge’s Short ribs.  The tender meat sits atop an onion bread pudding, made with roasted onions and formed with a sugarless custard.  The sauce is his own version of a molé, made by combining the braising liquids from the short ribs and other traditional molé ingredients.

 

 

 

Beet & fennel salad with a lemon-curry dressing and breaded ricotta cheese balls.
